  • 1 cup Fresh or frozen blueberries Do not thaw frozen blueberries.

Method
 

Making the Madeleines
  1. Preheat your oven to 375°F (190°C) and grease your madeleine pan well.
  2. In a mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, dried lavender, baking powder, and salt until evenly combined.
  3. In a separate bowl, blend the almond milk, melted coconut oil, and vanilla extract together until well mixed.
  4. Gradually pour the wet mixture into the dry ingredients while stirring gently until just combined.
  5. Fold in the blueberries carefully using a spatula.
  6. Fill each madeleine mold about three-quarters full with batter.
  7. Bake for 15-20 minutes until golden brown around the edges and a toothpick comes out clean.
  8. Let the madeleines cool in the pan for 5 minutes before transferring to a wire rack.
