- In a mixing bowl, combine whole-egg mayonnaise, diced gherkins, Dijon mustard, ketchup, and your choice of spices like garlic and onion powder. Stir the mixture until it's well combined and creamy.
- Take small, soft flour tortillas and divide the minced beef into eight equal portions. Spread each portion evenly on one side of the tortilla.
- Place a large frying pan over medium-high heat and lightly spray the surface with olive oil. Season the exposed sides of the beef with salt and pepper.
- Carefully lay the tortillas, beef-side down, onto the hot skillet and cook for about 2-3 minutes until the beef is fully cooked and the tortilla starts to crisp up. Flip the tacos and cook for another 15-20 seconds, adding a slice of American burger cheese on top.
- Once the cheese has melted, remove the tacos from the skillet and assemble by topping each taco with shredded lettuce, slices of gherkins, finely diced onion, and drizzle with the creamy special sauce.
