  • 1 medium Yellow Onion
  • 14.5 ounces Diced Tomatoes canned, preferably fire-roasted
  • 2 tablespoons Tomato Paste
  • 15 ounces Pumpkin Puree pure pumpkin, not pie filling
  • 13.5 ounces Unsweetened Coconut Milk canned
  • 2 tablespoons Lemon Juice fresh is ideal
  • 1 tablespoon Brown Sugar light or dark
  • 2 tablespoons Curry Powder adjust for heat preference
  • 2 teaspoons Mild Chili Powder or hot chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground Black Pepper
  • 0.5 teaspoon Ground Cumin
  • 0.5 teaspoon Ground Mustard Seed optional
  • 0.5 teaspoon Ground Coriander Seed
  • 0.5 teaspoon Ground Cinnamon
For Serving
  • 1 cup Optional Grain/Legume white/brown rice, quinoa, or cauliflower rice
  • Optional Toppings fresh cilantro, red pepper flakes, coconut milk

Step‑by‑Step Instructions
  1. Dice the chicken breasts into bite-sized ½ to 1-inch cubes. Coat with olive oil, salt, and pepper.
  2. Heat skillet over medium heat and sauté the chicken for 5-7 minutes until golden brown. Transfer to a plate.
  3. In the same skillet, sauté diced onions for 2-3 minutes until soft and translucent.
  4. Add diced tomatoes, tomato paste, pumpkin puree, and coconut milk. Stir in lemon juice until combined.
  5. Stir in brown sugar, curry powder, chili powder, cumin, and other seasonings. Add chicken back to sauce.
  6. Cover and simmer on low for 10-15 minutes, stirring occasionally until chicken is cooked through.
  7. Serve warm over chosen grain with optional toppings and enjoy!
