Step-by-Step Instructions
  1. In a mixing bowl, combine jerk seasoning, soy sauce, honey, olive oil, lime juice, minced garlic, and chopped onion. Whisk until well blended. Add the chicken thighs and ensure they are fully coated. Cover and refrigerate for at least 15 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. Arrange the marinated chicken thighs in a baking dish and pour the remaining marinade over them.
  4. Scatter pineapple chunks around the chicken.
  5. Cover the baking dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and continue baking for an additional 20-25 minutes or until chicken reaches 165°F (75°C).
  7. Optional: For extra crispiness, broil for the last 2-3 minutes.
  8. Garnish with fresh cilantro or parsley and serve warm.
