- Thaw puff pastry sheets at room temperature for 30 to 40 minutes until soft.
- Preheat your oven to 400°F (200°C). Cut thawed pastry into four squares each.
- Lightly score a smaller square inside each puff pastry square.
- Brush the tops of each pastry square with a beaten egg wash.
- Bake for 12 to 15 minutes until puffed and golden brown.
- Heat olive oil, sauté shallots until soft, then add garlic and spinach.
- Mix in cream cheese, heavy cream, parmesan, and nutmeg with the sautéed spinach.
- Create a well in each pastry shell and fill it with the creamy spinach mixture.
- Crack a large egg into the center of each filled pastry.
- Bake assembled pastries for an additional 10 to 15 minutes.
- Garnish with fresh chives and serve hot.
