Method
 

Step-by-Step Instructions
  1. Thaw puff pastry sheets at room temperature for 30 to 40 minutes until soft.
  2. Preheat your oven to 400°F (200°C). Cut thawed pastry into four squares each.
  3. Lightly score a smaller square inside each puff pastry square.
  4. Brush the tops of each pastry square with a beaten egg wash.
  5. Bake for 12 to 15 minutes until puffed and golden brown.
  6. Heat olive oil, sauté shallots until soft, then add garlic and spinach.
  7. Mix in cream cheese, heavy cream, parmesan, and nutmeg with the sautéed spinach.
  8. Create a well in each pastry shell and fill it with the creamy spinach mixture.
  9. Crack a large egg into the center of each filled pastry.
  10. Bake assembled pastries for an additional 10 to 15 minutes.
  11. Garnish with fresh chives and serve hot.
