  • 1 can Full-Fat Coconut Milk
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Lemon Zest
  • 3 cloves Garlic (Minced)
  • 1 tablespoon Ginger (Grated)
  • 1/4 cup Fresh Cilantro (Chopped)
  • 1 tablespoon Fish Sauce Substitute with soy sauce for vegetarian option.
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Cornstarch Mixed with water to thicken.
For Garnish
  • 1 slices Lemon For presentation.
Optional for Serving
  • 2 cups Jasmine Rice

Method
 

Step-by-Step Instructions
  1. Preheat the Oven to 400°F (200°C).
  2. Season the cod fillets generously with salt and pepper on both sides.
  3. In a large ovenproof skillet, heat a drizzle of olive oil over medium-high heat.
  4. Carefully add the seasoned cod fillets to the hot skillet and sear for about 2 minutes on each side.
  5. In the same skillet, add the full-fat coconut milk, lemon juice, lemon zest, minced garlic, and grated ginger.
  6. Stir in the fish sauce, brown sugar, and soy sauce into the coconut lemon mixture, stirring until well combined.
  7. Whisk the cornstarch mixed with water into the sauce until it thickens slightly, about 1-2 minutes.
  8. Return the seared cod fillets to the skillet, spooning the coconut lemon sauce over the top.
  9. Transfer the skillet to the preheated oven and bake for 10-12 minutes.
  10. Remove from the oven and garnish with chopped cilantro and fresh lemon slices.
  11. Serve alongside fluffy jasmine rice.
