Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper or olive oil.
  2. In a large mixing bowl, combine ground chicken, ricotta cheese, beaten egg, breadcrumbs, Parmesan, garlic, onion, fresh herbs, salt, pepper, and Italian seasoning. Mix gently.
  3. Roll the mixture into 1.5-inch meatballs and place them on the prepared baking sheet, leaving space between each.
  4. Bake for 18–22 minutes until golden-brown and internal temperature reaches 165°F (74°C).
  5. Let the meatballs rest, then serve over pasta, in subs, or as appetizers with marinara sauce.
