Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x5-inch loaf pan.
  2. In a small bowl, combine brown sugar and ground cinnamon.
  3. In a mixing bowl, whisk together eggs and granulated sugar until light and fluffy. Stir in melted butter and vanilla extract.
  4. Gradually mix in all-purpose flour, baking powder, baking soda, and salt until just combined.
  5. Gently fold in chopped apples.
  6. Pour half of the batter into the prepared loaf pan and sprinkle three-quarters of the cinnamon sugar mixture on top.
  7. Pour remaining batter over cinnamon sugar, then sprinkle rest of the cinnamon sugar mixture on top and swirl gently with a knife.
  8. Bake for 35–45 minutes until golden brown; check doneness with a toothpick.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
