- Preheat your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper.
- In a mixing bowl, combine the graham cracker crumbs and melted butter until well blended. Press the mixture evenly into the bottom of the baking dish.
- In a separate bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing thoroughly. Stir in the vanilla extract.
- Toss sliced apples with cinnamon and flour in a bowl. Layer the apples over the cheesecake filling.
- Combine oats, brown sugar, and flour in a bowl. Add melted butter and mix until crumbly. Sprinkle over the apple layer.
- Bake for 35 to 40 minutes until the topping is golden brown and the cheesecake layer is set with a slight jiggle.
- Allow to cool completely on a wire rack before slicing into bars.
