- Preheat your oven to 350°F (175°C). Line the muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.
- In a separate bowl, blend the Greek yogurt, brown sugar, eggs, and vanilla extract until smooth.
- Fold the wet mixture into the dry ingredients gently, and fold in the diced apples.
- Divide the batter into the muffin tin, filling each cup about ¾ full. Optionally, sprinkle oats or nuts on top.
- Bake for 18 to 22 minutes, until a toothpick inserted comes out clean. Let cool in the tin for 5 minutes.
- Transfer to a wire rack to cool completely and serve warm.
