Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and spray a 9x5 inch loaf pan with nonstick cooking spray.
  2. Combine chopped medium baking apples, light brown sugar, ground cinnamon, and ground ginger in a medium bowl.
  3. In a large mixing bowl, whisk together the large egg, white granulated sugar, vegetable oil, full-fat sour cream, and vanilla extract.
  4. In a separate bowl, sift together the all-purpose flour, baking soda, and kosher salt, then gradually mix into the wet ingredients.
  5. Gently fold in three-quarters of the apple mixture into the batter and pour into the prepared loaf pan.
  6. Spread the remaining apple mixture over the top of the batter.
