  • 4 cups cubed potatoes starchy varieties like russet or Yukon gold
  • 1 cup ranch dressing store-bought or homemade
  • 2 cups shredded cheese cheddar works beautifully

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel the potatoes if desired, then cut them into bite-sized cubes, about 1-inch pieces.
  3. In a mixing bowl, add the cubed potatoes and pour in 1 cup of ranch dressing. Mix until the potatoes are thoroughly coated.
  4. Incorporate half of the 2 cups of shredded cheese into the potato mixture and stir well.
  5. Grease a 9x13-inch baking dish and transfer the potato mixture into it, spreading evenly.
  6. Sprinkle the remaining shredded cheese evenly over the top.
  7. Cover the baking dish with aluminum foil and bake for 20 minutes.
  8. After 20 minutes, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
  9. Allow the dish to cool for a few minutes before serving.
