Method
- Preheat your oven to 375°F (190°C).
- Wash and peel the potatoes if desired, then cut them into bite-sized cubes, about 1-inch pieces.
- In a mixing bowl, add the cubed potatoes and pour in 1 cup of ranch dressing. Mix until the potatoes are thoroughly coated.
- Incorporate half of the 2 cups of shredded cheese into the potato mixture and stir well.
- Grease a 9x13-inch baking dish and transfer the potato mixture into it, spreading evenly.
- Sprinkle the remaining shredded cheese evenly over the top.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- After 20 minutes, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
- Allow the dish to cool for a few minutes before serving.
